Now we Californians will barbeque beef along with the best of any Texan. We will fire up the grill for fish, chicken, beef, pork, you name it, we will barbecue it. However, for this post I am only going to concentrate on one cut of meat and that is the skirt steak. Miles and miles apart from the barbeque beef brisket which they use in Texas, yet they are both tough cuts of meat. The skirt steak is a dense cut of meat and so it takes a bit longer to cook than a regular steak. However, we can use this to become an advantage for us because we can allow the outside to char just a bit and it still won't affect the meat inside. It really adds to some great flavor.

The best way to prepare our skirt steak is to pound them flat with a mallet before we cook them. Then we marinate them for a while, say, a couple of hours. Many times you can just put the meat in a ziploc bag and throw it in the fridge overnight. This works just as well. For the marinade we use salt and pepper to taste (as always), diced garlic, some red pepper flakes and then about two pounds of skirt steak. You take these things and throw them all together into a ziploc bag and stash it away in the fridge for a few hours. Now when it is ready you want to cook over a very high heat with the grill set about two to three inches over the hot coals. When the meat is done, you slice it into about two to three inches in length and then slice them into pieces about 1/4 inch wide. And this would be against the grain.

We always serve this with carmelized onions and bell pepper strips (long strips of bell pepper, both red and green) which we have carmelized and cooked. We call this fajitas, for some in this state this is their version of barbeque beef. Fajitas are mainly served with:
*red and green bell peppers

*one jalapeno pepper

*carmelized onion

*lettuce

*shredded cheddar cheese

*diced tomatoes

*sour cream

*taco sauce

*refried beans

For the most part this is what is served with fajitas, or one of our versions of barbeque beef here in California. You can add or subtract any of the above items which you prefer.
