I love chicken thighs. They are so absolutely delicious. Let's talk abut them for a bit. You know if I go on too long that this will be what my wife and I will be eating this weekend. Here is why they are great to try your hand at with the barbecue. You really cannot mess them up. I know, a lot of newbies are afraid to try, but let's walk you through this. First and foremost, if you realy want your chicken thighs to become delicious, no, absolutely delicious, try brining them first for a bit. Whoa, whoa, whoa, I ain't no professional chef like you, what is a brine?
Come on, we have talked about this before. A brine is just simply a mixture, in correct proportions of salt to sugar and then some added flavors (flavors or herbs which you, you, you like). But all types of poultry and pork benefit realy good from brining. All you are going to do is soak the chicken thighs in this brine for up to one hour, not more.
Now you cannot go wrong with chicken thighs. They are one of the most often eaten parts of the big bird, oops, got that word wrong. I think I remembered that from when my kids were little….cannot say big bird. They are one of the most eaten parts of the chicken. How's that? Look, they are high in protein and low in fat. And the best part is that they are not all that expensive to purchase. So you are giving your pocketboot a rest….for a change. And just like the tacos I wrote about the other day, you can eat a lot of these.
After you take them out of your brine (remember, one hour – max), rinse them off and then dry them. Now you can sprinkle some good BBQ rub on them, like Chef Michaels Signature Blends, or your choice and then off to the grill to cook them up. Did I mention that if you are having friends over, this is a great dish to serve up. It's cheap, but you can really make it taste good and no one will notice what you are doing to them.
