How To Cook A Steak

How to cook a steak? Now there is an interesting question which has a lot of people perplexed. Unless you are a pro, or have a lot of experience, I would suggest that you use an accurate instant read thermometer. It will just make your life a little bit easier in this short term, learning process. After you have done this for a bit, then you can learn different methods for determining whether the steak is cooked perfectly or not, but for the ones who are just new at this, yes, use a thermometer.

Choose your cut which you would like to grill. Remember that marlbling is one of your best friends. This is what makes your meat more tender and a whole lot more tender with great flavor. Now:

* thaw it out
* trim the fat
* season to taste

Whether you want to use a good, high quality BBQ rub such as our Texas Style Mesquite BBQ rub, or just plain salt and pepper, put it on at this time and allow it to come to room temperature. A lot of times before I use the rub I will put just a bit of olive oil on the steak. This will keep it from drying out, but also allow the rub to stick to the steak.

Two caveats, or words of warning: you know that you are always supposed to wash your hands thoroughly after touching raw meat. And two, never, never, poke holes in the meat that you are grilling. Use tongs, use a spatula, use your hands to turn everything over, but do not poke holes in it so that the juices can run out. What, you want to serve up a dry, stringy piece of meat.

I know you all remember from previous posts to use the medium high heat part of the grill to put on the grill marks. I am a huge fan of grill marks. Get some good ones on there. After that is done, then you can move the steak to a cooler part of the grill, maybe over indirect heat and finish cooking it up there. Remember, I am sharing with you on how to cook a steak. We want your customers, your friends, your neighbors, your family to see that and say, wow! this is just like Outback! I have never been there, but I hear they serve a great steak. Well, we can teach you how to do the exact same thing, for just a fraction of the cost. That is one of the reasons I love barbecuing and grilling at home so much. The same quality, or better since you know what has gone on in the preparation of the food at way less than what it would cost you to eat out.

* The FDA has these rules for meat temperatures:
* Medium Rare: 145°
* Medium: 160°
* Well Done: 170°
