Barbeque Zucchini is one of the best things you can fix during the summer months.
how many times have you shown up to work or
church one day only to find a bushel of the stuff sitting there from a friend or a neighbor's garden.
Barbeque Zucchini is one of my favorite side dishes to
prepare on my BBQ every week. It does not take
long. It is easy to prepare and the clean-up is
simply as easy as pie.
First we must ask ourselves, is zucchini a fruit
or a vegetable? Both, I say. It's part of the
gourd family. And along with the summer squash which
almost looks similiar, they are both a fruit and a
vegetable.
Because it contains seeds, this makes it a fruit.
But it is used and cooked as a vegetable in most dishes.
For barbecuing this vegetable we like to purchase ones
which are just a little bit on the medium side. We do
not really like the smaller ones even though they are
more tender than their larger brothers and sisters.
Here is the reason: we are going to slice them
lengthwise and for this purpose we will be getting
about four slices out of each one instead of
two (if we were to use the smaller ones).
1 lb. of Zucchini
4 T. of olive oil
1 1/2 tsp. of oregano, dried
1/2 tsp. garlic powder (never garlic salt)
1/2 tsp. fresh ground black pepper
2 T. of lemon juice
Salt to taste.
First, mix the oil, garlic powder, salt and pepper,
and the oregano together. Set this aside. Now slice
the big Z (or little z's if they are small!) lengthwise and brush the cut slices with
this mixture. Let it sit for an hour to marinate.
After an hour, grill or barbecue the veggie on a
medium hot grill about four to five minute of each side.
Of course, half way through rotate them so you have
nice grill marks on each side.
When you take it off the grill, you can sprinkle
on a little lemon juice. This gives it such a great flavor!
This last weekend I served this to my kids
that were over and we omitted the lemon juice and instead
I sprinkled a bunch of shredded parmesan cheese on it. They really liked it!
Anyway you fix it, Barbeque Zucchini is sure to always
be a hit all year long…..not just during the summer
months.
