What is a vertical chicken roaster you ask? I don't know: end of my blog today. No! Only kidding. A vertical roaster is a metal or ceramic stand in which you place the chicken so that it is standing up while you roast it.
A couple of points here, if you have made my favorite dish which just happens to be beer can chicken….with the beer can inside, then you know the problems of having the can fall over with the chicken on top of it.
They are making these beer cans so flimsy these days that you just cannot keep them upright anymore. And there really is nothing more upsetting than to grill this baby for three hours, I mean, really fantastic beer can chicken and then you go and pick it up and the can falls over and the chicken starts flopping around on the dirt like it just got its head cut off.
….don't mean to be graphic, it is just that it happens and it is inconvenient. This is why they have come up with the vertical chicken roaster. Roasting your bird on the grill just got so much easier. Here is why, you can place that chicken right over the vertical chicken roaster (with a wide base) and then not worry about it for the rest of the time that you are grilling.
And here is a good thing, not only are the bases more wide so it prevents it from tipping over, but it allows you to put more on the grill or in the oven at the same time. I have done three beer can chickens before on my backyard grill and when one falls over, they all fall over….kinda like dominoes.
And one of the best parts is that most of then have some sort of bowl down at the bottom to catch the drippings. Now this part I absolutely love because not only do you put the beer in there, but it keeps you from having those nasty flare-ups. Or am I the only one who has flare-ups when grilling chicken?
Here is a recipe you can use with your vertical chicken roaster. First, gather your vertical roaster, then the chicken, a half a cup of beer, and your favorite BBQ rub. Now, you know you can use soda, lemon aid, seven-up, you have a lot of different choices as far as the liquid goes. And you do not always have to use BBQ rub, you can experiment with salt and lemon pepper. Now that is a really, really good deviation from the norm.
Rinse and dry the chicken. Make sure that the bag of innards is gone first. That means take it out. Season your chicken to taste, whether it be:
- salt and pepper
- salt and lemon pepper
- BBQ rub
Now, make sure that your chicken is going to fit into your grill with the lid closed before you start to do all your work. You just might be cooking this in your oven, you never know. Pre-heat the grill to medium heat.
Take the beer and pour half of it into the bowl part of your vertical chicken roaster. I will leave it to your imagination what to do with the other half. Place the chicken over the roaster and place it on the grill. Now, you are going to place this over the indirect heat part of the grill. You do not want to grill this over direct heat. It is going to take about two to two and a half hours. And you want to be turning, or rotating this every half hour.
With an internal thermometer check the temperature and at 160 degrees F. it is done and you can remove it and let it rest for about 15 minutes before you start carving into it. And so there you go, that would be how to have a really good tasting, juicy, moist bird cooked on a vertical chicken roaster.
