When you are sitting around with your friends and you are all talking about bbq and recipes and someone asks, “How do you grill salmon?” This should be your only answer. It is easy, so easy to fix and grill up that this should always be your standard answer. And that answer is the triple citrus smackdown.
Whoa, what is that you ask? Well, part of the answer comes from El Pollo Loco. Wait a minute, I thought they were a chicken place? Well, they are. But the marinade which they use for the chicken is where I got the idea for this for salmon. This is a great recipe for grilled salmon. It is always amazing what you can come up with when you are thinking of how do you grill salmon.
You can never go wrong with salmon and the tangy flavors of citrus. I just tripled it up and gave you the triple citrus smackdown for when someone wants to know how to grill shrimp.
First of all, think about salmon. No other regular fish gives you this:
- omega-3 fatty acids
- which keep your arteries clear
- hearts strong
- strengthens your immune system
- strengthens your eyesight
- improves your mental health
Now you know why I am such a huge fan of salmon and what it can do for you these days. And anything which has to do with lemons and limes I am in favor of., especially when you are considering a recipe for grilled salmon and how you might fix it.
Ingredients:
- ½ cup of fresh orange juice
- ¼ cup of fresh grapefruit juice
- ¼ cup of lemon juice, fresh
- ¼ cup of lime juice, fresh
- ¼ cloves of garlic, minced
- 3 TB. orange marmalade
- 2 TB soy sauce
- 1 TB champagne vinegar (rice wine will do also)
- 1 TB turbinado sugar
- 1 TB butter
For Grilling the Salmon:
- Light olive oil, for brushing
- one half of a medium size salmon which can give you about 5-6 portions when cut up after grilling
- sea salt and freshly cracked black pepper
Directions
For your glaze you want to take all of your ingredients and put them into a sauce pan and cook them over a medium heat. Stir regularly to keep from scorching and burning on the bottom, but you want to simmer this until it reduces and becomes a nice, syrupy glaze. Season this with salt and pepper to your taste.
Heat your grill to a medium to a high heat. Brush the whole side of the salmon with some light olive oil to keep it from sticking. Salt and pepper your fish. Place the salmon on the grill and grill it for about 6 to 7 minutes. Now I should mention that you can cut up the salmon to have individual portions and then grill those up. It might be easier, but you have to remember I come from the restaurant and catering industry where presentation is everything. I am only thinking of the final presentation on the platter (and then the portioning up comes later…..after the WOW factor).
Here is the beauty. Once you have those nice grill marks on the flesh side of the salmon you can turn it over on to the skin side down. Now brush your salmon with the glaze and keep brushing it on there every few minutes.
Not only will you come up with a beautifully triple citrus smackdown glaze on the salmon but once it is done, you can gingerly pick it up with your spatula and the skin should stick to the grill and you won't even have to bother with it. When anyone is ever thinking of how do you grill salmon, just think of this recipe. It is just so easy to do.
You can then take the salmon and transfer it to a nice serving platter. Brush it once more with your glaze and then arrange some parsley all around it and maybe some nice lemon slices. Always remember that this is one heck of a great recipe for grilled salmon.
